On April 23, Novikov Beverly Hills hosts an evening centered around one of the ocean’s most prized ingredients.

The night begins with a live Bluefin tuna cutting in the heart of the dining room. A rare moment, up close. Precise, almost ceremonial, and never quite the same twice.

From there, the dinner unfolds as a multi-course experience, each dish exploring a different side of Bluefin. Clean, rich, delicate.

A brief conversation with the chef offers insight into the craft behind the cuts and the philosophy behind the menu.
